Orange-y cabbage deliciousness


I just LOVE this yummy Asian salad that is just loaded with good for you foods! Make extra and keep the dressing in the fridge until ready to mix in.


Salad Ingredients:

  • Chopped nappa cabbage, 3/4 full of a large bowl. It's about 1/2 of a large nappa cabbage or 1 smaller sized one

  • 2 cups snow peas, sliced lengthwise

  • 1 cup carrots, shredded

  • 4 green onions, chopped

  • 1 cup cilantro, finely chopped

  • 2 cups spinach, chopped

Dressing Ingredients (you can add a little more of anything you like to match your taste buds!):

  • 1 orange, juiced

  • 2 Tbsp apple cider vinegar

  • 1 tsp fresh ginger, grated

  • 2 Tbsp black sesame seeds

  • 1 serrano pepper, seeds removed and finely diced

  • 1 tsp salt

  • 1/4 cup extra virgin olive oil

  • 1 tsp toasted sesame oil

Topping:

  • 1 orange, peeled and sliced into chunks - save for topping

  • 1/2 cup dry, unroasted peanuts - save for topping

What to do with all this goodness:

  • Place all salad ingredients into large bowl

  • Place all dressing ingredients into a jar with lid and shake it all up

  • Mix dressing into the salad

  • Top with fresh orange and peanuts

  • Mmm... enjoy!
