Avocado Boats

I love this salad in an avocado boat, and I hope you do, too!
Ingredients:
2 avocados: save the shell for the "boat". Halve each avocado, remove pit, slice avocado width and length wise being careful not to cut into the avocado shell. Scoop chunks with a spoon and add to large bowl with other ingredients and set aside the shell to use as a boat/bowl
1/2 long English cucumber (or 1 large cucumber), diced
5 Compari tomatoes (or 3 vine ripe tomatoes), diced
3 radishes, sliced and diced
1/2 bell pepper, diced used 1/4 green and 1/4 red since I had that in the fridge)
1/4 red onion, diced
2 cups lettuce, finely chopped or shredded
2 cups cilantro leaves, finely chopped
2 limes, juiced
1/2 tsp sea or Himalayan salt
1 jalapeno, seeds removed and finely diced
Instructions:
Gently mix everything in the bowl and scoop into avocado shell. Serve and enjoy your avocado boat! Oh, and refill right into the boat for the next helpings- just one will not be enough! 😉
